  • Author: Kimberly
  • Total Time: 50 min
  • Yield: 250 ml / 1 cup 1x

Description

RECOMMENDED EQUIPMENT

  • blender
  • medium-sized saucepan
  • whisk
  • a bowl which the medium saucepan fits into
  • 2 medium-sized bowls
  • 2 fine sieves
  • sealable container (oil bottle)
  • ice cubes
  • coffee filter

Ingredients

Units Scale
  • 50 grams fresh turmeric
  • 250 milliliters sunflower oil

Instructions

  1. Wash the turmeric, roughly chop it and put it into the blender. Pour in the oil. Blend on the highest setting until there are only tiny pieces of the turmeric left.
  2. Pour the mixture from the blender into a medium-sized pot and heat it over medium heat to a temperature of about 101°-104°C (213°-219°F), and maintain this temperature for the next 15 to 20 minutes. Stir occasionally, making sure the temperature remains steady and nothing gets burned.
  3. Prepare a bowl large enough to fit a medium-sized pot, and fill it with cold water and a handful of ice cubes. Also, hang a fine sieve strainer over one medium-sized bowl and another fine sieve strainer, with a coffee filter inside it, over another medium-sized bowl.
  4. Now, place the pot in the ice water and stir to cool the oil quickly. Once the oil is almost cold, remove the pot from the water and pour the oil into the prepared fine sieve to catch the coarse particles.
  5. Then, pour the oil into the second sieve, which is equipped with a coffee filter, to catch the remaining finer particles.
  6. Allow the oil to drip through for about 30 minutes or maybe less depending on how many remaining particles are in the coffee filter. Once all the oil has passed through the coffee filter, transfer the collected amount of oil into a sealable container or directly into an oil bottle. Store in the refrigerator for up to one week.

Description

RECOMMENDED EQUIPMENT

  • 20×20 cm baking dish (8×8 inch)
  • large bowl
  • electric mixer
  • spatula
  • 2 small pots (or microwave)
  • sharp knife
  • cutting board
  • medium-sized bowl

Ingredients

Units Scale

SHORTBREAD LAYER

  • 115 grams butter
  • 65 grams white sugar
  • 120 grams all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract

BROWNIE LAYER

  • 2 eggs
  • 200 grams brown sugar
  • 115 grams butter
  • 50 grams baking cocoa powder
  • 3/4 tsp vanilla extract
  • 1/4 tsp salt
  • 60 grams all-purpose flour

GANACHE

  • 200 milliliters heavy cream
  • 200 grams semi-sweet chocolate

Instructions

PREPARATIONS

  • Prepare your baking dish by lining it with parchment paper or lightly greasing it. Set aside.
  • Preheat the oven to 175°C (350°F).

INSTRUCTIONS

  • For the shortbread layer: Whip butter and sugar on high until light and fluffy. Then add flour and salt and mix with a spatula to form a dough. Press the dough into your prepared baking dish and distribute evenly. Prick the dough with a fork to keep it flat while baking. Bake for about 12 minutes, until just lightly golden.
  • Meanwhile, prepare the brownie batter. In the microwave or a small pot, melt the butter and set aside to cool. In a bowl, whip eggs and sugar until light and fluffy. Add the cooled butter, cocoa powder, and vanilla extract to the egg-sugar mixture. Mix everything into a creamy batter. Then add flour and salt, mixing only until no flour streaks are visible.
  • Remove the shortbread base from the oven and spread the brownie batter over it. Bake for an additional 15 minutes.
  • While that bakes, prepare the ganache. Finely chop the chocolate and place it in a medium-sized bowl. Then, in a small pot, heat the cream until it starts to steam or simmer lightly. Pour the hot cream over the chocolate and let it sit for a few minutes, then stir slowly until all the chocolate has melted. Place the ganache in the refrigerator.
  • Remove the brownies from the oven and let them cool completely.
  • Once the shortbread brownies are completely cool, pour all the ganache over them and refrigerate again until the ganache sets, about 4-5 hours. I used milk chocolate in equal parts with cream, so it takes a bit longer than usual. You can speed up the process by doubling the amount of milk chocolate or substituting milk chocolate with dark chocolate.
  • Once the ganache is firm, cut the brownies into 9-12 equal pieces and optionally garnish with grated chocolate. Enjoy your piece of happiness.

Vanilla Sauce

  • Author: Kimberly
  • Total Time: 20 minutes
  • Yield: 4 1x

Description

RECOMMENDED EQUIPMENT

  • 2 small pots
  • medium glass or aluminum bowl
  • whisk
  • spatula
  • sharp knife
  • cutting board

Ingredients

Units Scale
  • 150 milliliters heavy-cream
  • 150 milliliters whole-fat milk
  • 3 egg yolks
  • 50 grams brown sugar
  • 1 vanilla bean
  • pinch of salt

Instructions

  1. Pour the cream and milk into a pot. Slice the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the bean to the pot with the cream and milk. Bring to a simmer over medium heat, then set aside.
  2. Meanwhile, fill another pot halfway with water and bring it to a simmer.
  3. Separate the eggs and place the yolks in a medium glass or aluminum bowl. Add the brown sugar and salt, then whisk until smooth. The egg whites aren’t needed for this recipe, but you can use them to make delicious meringue.
  4. Remove the pot with the water from the heat and place the bowl with the egg-sugar mixture on top. The bottom of the bowl should not touch the water. Gradually add the hot cream to the egg-sugar mixture, whisking constantly. If you’re doing this alone, add a few tablespoons at a time and whisk quickly, repeating until about 3/4 of the cream is incorporated. This slow addition prevents the egg yolks from curdling by gently warming them. When most of the cream is added, pour in the rest and whisk.
  5. Place the pot with the bowl back on the stove over medium-high heat and switch from the whisk to a spatula. The spatula incorporates less air, preventing the sauce from becoming foamy. Stir the mixture with the spatula until it thickens, about 10 minutes, or until it reaches 75°-79°C (167°-174°F).
  6. To check if the sauce is ready, you can use a simple trick known as „coating the back of a spoon“ or as we say in Germany „pull off to the rose“. Dip a wooden spoon into the sauce and blow on the back of the spoon. If you see a pattern that resembles rose petals, the sauce is ready. A nice visual, right? So when you see this, remove the sauce from the heat. You can serve it now warm or let it cool. Enjoy this piece of happiness 🙂
