  • 200 milliliters whole milk
  • 2 tsp vanilla extract
  • 2 tsp sweetener of choice (I used agave syrup)

PEAR COMPOTE
  • 1 pear
  • 1 tsp vanilla extract
  • 2 tsp sweetener of choice (I used honey)
  • juice of half a lemon
  • pinch of salt
TOPPINGS
  • 2 dates
  • 50 g pecans
  • pinch of salt
  • 1 passionfruit

ZUBEREITUNG

  1. Start by peeling the pears and cutting them into small pieces. Add them to a small pot with vanilla extract, honey, a pinch of salt, and lemon juice. Let them simmer over medium heat for 15 to 20 minutes.
  2. While the compote is cooking, combine oats, milk, agave syrup, a pinch of salt, and vanilla extract in a second small pot. Cook over medium heat for 10 to 15 minutes until creamy.
  3. Meanwhile, add dates, a pinch of salt, and pecans to a food processor. Pulse until finely chopped and crumbly.
  4. Cut open a fresh passionfruit and set the pulp aside.
  5. Once the porridge and pear compote are ready, divide the porridge between two bowls, spoon the pear compote on top, and sprinkle with the date-pecan crunch.
  6. Finish by adding the fresh passionfruit on top and enjoy.

PREPARATIONS

  • Here’s the recipe for the Pineapple Coconut Oil. You’ll need about 30g of it.

INSTRUCTIONS

  1. Preheat the oven to 160°C / 320°F. Line a baking sheet with parchment paper and set it aside.
  2. In a medium-sized bowl, mix together the oats and almonds. Set aside.
  3. In a small saucepan, stir together sugar, agave syrup, vanilla extract, and coconut oil. Heat on low until the sugar melts. Pour this mixture over the oat-almond mix and stir well.
  4. Spread the mixture evenly onto the baking sheet. Bake for about 20 minutes.
  5. While the granola is baking, chop the freeze-dried bananas, pineapple, mango, and coconut chips to your desired size, and measure out the quinoa. Set everything aside.
  6. Once the granola is done baking, take it out of the oven and add the other ingredients. Mix everything well and let it cool.
  7. Once it’s completely cooled, crumble the granola and store it in an airtight container.

Oats Base

  • 100ml milk of choice – i used soy milk (1/2 cup)
  • 43g rolled oats (1/2 cup)
  • 1/4 tsp vanilla extract
  • pinch of salt

fried banana

  • 1 banana
  • 1 tsp coconut oil
  • 1 tsp maple syrup
  • 1/8 tsp cinnamon

Toppings

  • 50g frozen blueberries (1/4 cup)
  • 1 tsp nutbutter of choise – i used peanut butter

  • Cut the banana into finger-thick slices.

COOKING

1. Cook the 43g (1/2 cup) rolled oats, 100ml (1/2 cup) milk, 1 tsp vanilla extract and a pinch of salt in a small saucepan to a creamy consistency for approx. 10 minutes. Transfer to a small bowl.

2. In the same saucepan, cook the blueberries over a medium heat until soft and juices run clear.

3. Meanwhile, add 1 tsp coconut oil to a small frying pan. Once hot, add the banana slices to the pan. Fry on both sides until the bananas are golden brown. Finally, add 1 tsp maple syrup and 1/8 tsp cinnamon and allow the bananas to caramelize.

4. Put the 1 tsp nut butter for a few seconds in the microwave so that it softens.

5. Pour the blueberries with their sauce over the oatmeal in the bowl. Spread the bananas on top and finish with the nut butter.
