A Little Love Letter

The „Stramme Max“ is originally a German dish traditionally served as a slice of sourdough bread with ham and fried eggs. There are countless variations and modifications, as it is super simple and makes a delicious breakfast. Here you will find my version as a slightly crisper one with fresh tomatoes and my pickle & red onion salsa as well as a freshly baked ciabatta bun. Let’s enjoy this bun of happiness.

To serve Strammer Max, start by toasting a slice of your favorite bread. Fry eggs to your desired doneness. Place the ham and eggs on the toasted bread. Add a touch of freshness with sliced tomatoes and a zesty pickle and red onion salsa. Serve it open-faced for a picturesque presentation.

While Strammer Max is best enjoyed fresh, you can prepare components in advance. Store ham and eggs separately in airtight containers in the refrigerator. Assemble just before serving to maintain the ideal texture. If you have leftover Strammer Max, refrigerate it, but be aware that the bread may lose its crispiness upon reheating.

Ingredients

  • 1 ciabatta bun
  • 1 tbsp butter
  • 4 tbsp pickles & red onion salsa
  • 50 grams deli ham
  • 2 tsp sweet mustard
  • 2 eggs
  • 1 tomato
  • chives
  • salt
  • pepper

Instructions

  1. Prepare the pickles & red onion salsa.
  2. Cut the ciabatta bun lengthwise down the middle.
  3. Cut the tomato into thin slices.
  4. Cut the chives into rolls.
  5. Melt 1 teaspoon of butter in a pan, crack in 2 eggs and fry over a medium heat until the egg whites are fully cooked but the yolks are still runny.
  6. Meanwhile, spread the rest of the butter and sweet mustard on the bun halves. Now place the ham and tomato slices on top of it.
  7. Place the fried egg on top, season with salt and pepper and top with the pickles and red onion salsa and some fresh chives.

Ingredients

SALSA
  • 3 pickles (approx. 100g)
  • 1 small red onion
  • 1 tbsp parsley
DRESSING
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • salt
  • pepper

Instructions

  1. Cut the pickles into very small cubes.
  2. Cut the onion into very small cubes.
  3. Finely chop the parsley.
  4. In a small bowl, mix together 1 tbsp olive oil and 1 tbsp red wine vinegar as well as 1/8 tsp salt and 1/8 tsp pepper.
  5. Add the diced pickles, diced onion and chopped parsley to the dressing. Stir everything well and serve.

Ingredients

SALAD
  • 1 cucumber
  • 1 spring onion
  • 1 small red onion
  • 1/2 tsp roasted sesame seeds
DRESSING
  • 1 tsp sesame oil
  • 2 tbsp soy sauce
  • 1/2 tsp rice vinegar
  • 1/4 tsp sugar (or honey)
  • 1/2 tsp crispy chili oil
  • 1 garlic clove

Instructions

  1. Beat the cucumber lightly all over with a meat mallet or rolling pin. Then cut the cucumber into large pieces and place in a medium-sized bowl.
  2. Cut the red onion into thin strips and finely slice the spring onion and add everything to the bowl.
  3. Remove the skin from the garlic and press it into the bowl.
  4. Toast the sesame seeds in a small pan and add to the bowl.
  5. Now add the sesame oil, soy sauce, rice vinegar, sugar and chilli oil to the bowl and then mix with the other ingredients to make a salad. Optionally, add fresh coriander and chopped peanuts.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1/8 tsp pepper
SALAD
  • 200g tomatoes (7 oz.)
  • 150g cucumber (5 oz.)
  • 80g red onion (3 oz.)
  • 1 tbsp parsley

Instructions

  1. Cut the tomatoes, cucumber and onion into small pieces. Pluck the parsley from the stalks and chop finely.
  2. In a medium-sized bowl, mix 2 tbsp olive oil, 1 tbsp lemon juice and salt and pepper to taste.
  3. Now add the chopped tomatoes, cucumber and onion and the finely chopped parsley and mix everything into a salad.

  1. Remove the peel from the garlic clove.
  2. Stack the mint leaves on top of each other and roll them up. Then cut into fine rings and chop finely.
  3. Add yogurt to the bowl. Add the garlic clove with a press. Finally, add salt and finely ground pepper, as well as the finely chopped mint, and stir everything into a creamy dip.

A Little Love Letter

I honestly used to think making almond milk at home was some sort of witchcraft, like you’d need a shiny high-speed blender, nut milk bags, and basically a degree in food science. And what can I say? You really don’t. Haha. All it actually takes is almonds, water, and a little bit of patience. That’s it. And at the end, you’re rewarded with this fresh, creamy, silky-smooth plant-based milk that feels so much more real than anything you’ll find in a carton at the store. No additives, no gums, no ingredients you can’t even pronounce.

The fun part? You can make it your own in about a million ways. Cinnamon almond milk for cozy fall vibes? Absolutely. Vanilla almond milk that tastes like dessert in a glass? Always yes. A drizzle of maple syrup for that subtle sweetness? Yessss, please. Once you try customizing it, you’ll realize how versatile it really is. I use homemade almond milk especially in smoothies. One of my favorites is this Banana Bliss Smoothie with Poppy Seeds, Marzipan & Almond Butter. It makes everything so creamy without feeling heavy. But it’s also amazing poured over granola or blended into iced coffee.

And yes, I’ll admit, I’m also in it for the aesthetic. I always pour my almond milk into a classic glass bottle before popping it into the fridge. There’s just something about opening the door and seeing that little bottle waiting there. But it’s practical as well: in a clean bottle with a lid, it keeps fresh for three to four days. Just give it a good shake before using, since it tends to separate naturally.

So yeah, homemade almond milk might sound fancy, but really it’s one of the simplest little kitchen habits you can build. And once you’ve tried it, I promise you’ll wonder why you ever thought it was complicated.

Ingredients

OATS BASE
  • 100 milliliters milk of choice (I used soy milk)
  • 43 grams rolled oats
  • 1/4 tsp vanilla extract
  • pinch of salt
FRIED BANANA
  • 1 banana
  • 1 tsp coconut oil
  • 1 tsp maple syrup
  • 1/8 tsp cinnamon
TOPPINGS
  • 50 grams frozen blueberries (1/4 cup)
  • 1 tsp nutbutter of choice (I used peanut butter)

Instructions

  1. Cut the banana into finger-thick slices.
  2. Cook the rolled oats with milk, vanilla extract and a pinch of salt in a small saucepan to a creamy consistency for approx. 10 minutes. Transfer to a small bowl.
  3. In the same saucepan, cook the blueberries over a medium heat until soft and juices run clear.
  4. Meanwhile, add 1 tsp coconut oil to a small frying pan. Once hot, add the banana slices to the pan. Fry on both sides until the bananas are golden brown. Finally, add 1 tsp maple syrup and 1/8 tsp cinnamon and allow the bananas to caramelize.
  5. Put the 1 tsp nut butter for a few seconds in the microwave so that it softens.
  6. Pour the blueberries with their sauce over the oatmeal in the bowl. Spread the bananas on top and finish with the nut butter.
  • Cook Time: 15 min
