A little love letter
Dear salmon flatbread,
Weeknights and I are not always on the best terms. Then you show up, and suddenly dinner feels like a small win.
Warm, soft flatbread, salmon with smoked paprika and a little chili, crisp at the edges and flaky in the middle. Then a pile of red cabbage and cucumber slaw, bright with lemon, and that green cilantro yogurt sauce, made silky with avocado and sharp with lime and garlic. Hot and cold, crunchy and creamy, all in one bite.
You are the summer dinner I want when nobody feels like cooking but everyone still wants something good. Folded in one hand, a napkin in the other, the sauce running down my wrist. Worth it.

Salmon Flatbread
Spiced salmon on warm flatbread with a crunchy slaw and cilantro yogurt sauce. Fresh, light, 30 minutes.
Hi, I’m Kimberly. The kitchen is my happy place, and everything that turns out really good there ends up here. Including the little tricks I’d usually only tell my friends. more about me
season the salmon
In a small bowl, mix 1 tbsp of olive oil with ¼ tsp each of smoked paprika, salt, garlic powder, dried oregano, and ¼ tsp each of ground pepper and chili powder into a paste. Spread this paste over the salmon fillet and rub it in well. Refrigerate the salmon until further use.make the slaw
For the coleslaw, finely shred the red cabbage and place it in a medium-sized bowl. Quarter the cucumber, slice it, and add to the cabbage. Add olive oil, lime juice, salt, and pepper to the bowl, mix well, and set aside.make the sauce
For the cilantro yogurt sauce, in a tall container, blend cilantro (leave some leaves for garnish), lime juice, olive oil, 2 tbsp of water, yogurt, avocado, and peeled garlic cloves into a cream using an immersion blender. Add salt and pepper to taste. Set aside.sear the salmon
In a large skillet, sear the salmon on both sides for 2-4 minutes, depending on thickness, until slightly translucent inside. Remove the salmon from the skillet and place it on a plate to rest for a bit.warm the flatbreads
Meanwhile, warm the flatbreads in the oven or on the toaster for a few minutes.assemble
Spread 1–2 tbsp of sauce on the warm bread, add the coleslaw, then place a salmon fillet on top and slightly shred it. Garnish with some sauce, fresh cilantro leaves, green onions, and lime slices.Pairings
