Ingredients

CORN ON THE COB SALAD
  • 150 grams white cabbage
  • 100 grams romaine lettuce
  • 1 mango
  • 1 yellow bell pepper
  • 1 shallot
  • 100 grams feta cheese
  • 1/2 fresh yellow chili
  • handful fresh cilantro
DRESSING
  • 3 tbsp olive oil
  • juice of 1 lime
  • 1 passionfruit
  • salt & pepper to taste

Instructions

  1. Prepare the corn first. Mix the butter with Cajun seasoning, rub it all over the corn, and place them on a baking sheet. Roast in a preheated oven at 210°C / 410°F for about 20 to 30 minutes until golden brown and fragrant.
  2. While the corn is roasting, make the salad. Thinly slice the cabbage and romaine lettuce, wash thoroughly, and place them in a large salad bowl.
  3. Peel and chop the mango into pieces. Cut the yellow bell pepper into chunks. Thinly slice the shallot and finely chop the yellow chili. Pick the cilantro leaves off the stems and tear them lightly. Add everything to the salad bowl, then crumble the feta over the top.
  4. Mix olive oil, lime juice, passionfruit pulp, salt, and pepper in a small bowl. Set aside.
  5. Once the corn is done, take it out of the oven. Drizzle the dressing over the salad and toss well. Divide the salad between two plates and serve each with a roasted corn cob.

DRESSING & SALAD
  • 2 romaine lettuces
  • 1 garlic clove
  • 20 grams parmesan
  • 8 grams Worcestershire sauce
  • 1 tsp dijon mustard
  • 100 grams yogurt
  • 12 grams red wine vinegar
ROASTED TOMATOES
  • 250 grams cocktail tomatoes
  • 1 tbsp olive oil
  • 1 garlic clove
GNOCCHI
  • 400 grams soft gnocchi
  • 2 tbsp olive oil
TOPPINGS
  • chives
  • parmesan
  • black pepper

Instructions

PREPARATIONS

  • Wash tomatoes, lettuce, and chives.
  • Chop the chives into fine rolls and cut the lettuce into bite-sized pieces.
  • Peel the garlic cloves and finely chop or press them.
  • Grate the Parmesan finely.
  • Line a baking tray with parchment paper.
  • Preheat the oven to 200°C/392°F.

INSTRUCTIONS

  1. Place the tomatoes on the baking tray. Mix with 1 tablespoon of olive oil and a pressed garlic clove, and roast in the oven for about 15 minutes.
  2. Heat 2 tablespoons of olive oil in a medium frying pan and sauté the gnocchi until crispy.
  3. Meanwhile, divide the Romaine lettuce between two bowls. In a small bowl, thoroughly mix all the ingredients for the dressing. Evenly distribute the dressing over the lettuce in the two bowls, toss well to coat the lettuce with the dressing.
  4. Remove the tomatoes from the oven and distribute them and the gnocchi among the bowls. Toss briefly. Top everything with chives and Parmesan and serve immediately.

VEGETABLES
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 2 big tomatoes
  • 1 cup sugar snaps
  • 1 bay leaf
  • 1 tsp dried thyme
  • salt & pepper to taste
BREAD
  • 250 grams bread or baguette
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1 garlic clove
  • 1 tbsp chives
  • 1/8 tsp salt
  • 1/8 tsp pepper
DRESSING
  • 75 grams yogurt
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • 1 tbsp parsley
  • salt & pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F)
  2. Wash the bell peppers, tomatoes and sugarsnaps and cut into bite-sized pieces.
  3. Finely chop the parsley and chives.
  4. Peel the onion and cut into semicircles.
  5. Cut the bread into slices approx. 1 cm (1/2 inch) thick.
  6. Line a baking tray with baking paper and spread the chopped peppers, sugarsnaps, onions and tomatoes on it. Spread 1 tbsp olive oil, 1 tsp dried thyme and 1 bay leaf over the vegetables and mix everything well. Roast in the oven for approx. 15-20 minutes.
  7. In the meantime, to prepare the bread, mix the softened butter with the olive oil in a small bowl and add 1 tbsp of chopped chives. Add 1/8 teaspoon each of pepper and salt and the crushed garlic, stir well and spread evenly over the slices of bread. Place the slices on a rack with baking paper in the oven with the vegetables for the last 5 minutes and bake until golden brown.
  8. For the dressing, mix the yogurt, honey, white wine vinegar, parsley and a pinch each of salt and pepper in a medium bowl and set aside.
  9. Now take the vegetables and bread out the oven and leave to cool briefly. Remove the bay leaf. Place the vegetables in the bowl with the yogurt dressing and toss to combine. Divide the vegetables between two plates and serve with the garlic bread.
