INGREDIENTS

  • 200g pasta pappardelle (7 oz.)

SAUCE

  • 4 onions
  • 1-2 garlic cloves
  • 2 fennel salsiccia sausages (approx. 150g / 5-6 oz.)
  • 1 tsp smoked paprika
  • 50ml white wine (2 fl. oz.)
  • 100ml heavy cream (3.5 fl. oz.)
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp oregano
  • 1/2 tbsp tomato paste
  • 2 tsp butter
  • 1 tsp balsamic vinegar
  • 1/2 tsp dijon mustard

PREPARATIONS

  • Peel the onions and cut into thin stripes.
  • Remove the skin from the salsiccia.
  • Remove the skin from the garlic clove.

    COOKING

    1. Put a large frying pan on a medium heat and add 1 teaspoon of butter. Add the onions and season with salt. Reduce the heat slightly and simmer for 30 minutes until the onions caramelize and turn golden brown. Finally, add 1 teaspoon of butter and 1 teaspoon of balsamic vinegar, stir well and bring to the boil briefly. Now remove the onions from the pan.

    2. Put the same pan back on the stove top and heat 1 tbsp of olive oil in it. Add the sausage to the pan. Using a wooden spoon, break up the sausage, almost like coarse mince. Increase the heat to medium and fry until the sausages are golden brown.

    3. Now mix with 1 tsp smoked paprika and 1/2 tbsp tomato paste and fry briefly until fragrant. Return the onions to the pan with the sausages and mix well. Now deglaze with 50ml wine. Add 100ml cream and reduce for a few minutes. Now add the mustard and garlic. Season to taste with salt and pepper.

    4. Meanwhile, cook the pasta according to the instructions on the packet until al dente. Add the pasta to the sauce and toss thoroughly. Now arrange the pasta on plates and serve with freshly grated pecorino and parsley.
