INGREDIENTS

FOR 4 TBSP

SPICE BLEND

  • 1 tbsp coriander seeds
  • 1 tbsp cumin powder
  • 1 tsp cardamom seeds
  • 1 tsp black peppercorns
  • 1/2 tsp cloves
  • 1/2 cinnamon stick
  • 2 bay leaves

PREPARATIONS

  • mortar & pestle
  • airtight container
  • Break open the cardamom pods in a mortar and separate out the black seeds. Remove the shells and leave the seeds in the mortar.

    COOKING

    1. Add half a stick of cinnamon, the coriander seeds, the cumin seeds, the peppercorns, the cloves and the bay leaves to the cardamom seeds and grind everything well until a powder is formed.

    2. The powder can be used immediately or placed in an airtight container.
