COOKING

1. Separate the leaves from the stems and put the leaves into the blender. Pour in the oil. Blend on the highest setting until it becomes bright green and no pieces of basil are longer visible.

2. Pour the mixture from the blender into a medium-sized pot and heat it over medium heat, constantly stirring, to a temperature of about 102°-103°C (215°-217°F). Then, let the oil simmer with the lid partially on for the next 10 minutes. Stir only occasionally, making sure the temperature remains steady. This cooking time is essential for all the water to evaporate, allowing the perishable solids to settle at the bottom and the dark green oil to float on top. You’ll know all the water has evaporated when the oil in the pot barely bubbles anymore – so if it’s still bubbling vigorously, keep it simmering.

3. Meanwhile, prepare a bowl large enough to fit the medium-sized pot, filled with cold water and a handful of ice cubes. Also, hang a fine sieve strainer over a medium-sized bowl.

4. Now, place the pot in the ice water and stir to stop the cooking process. Once the oil is no longer boiling and is almost cold, remove the pot from the water and pour the oil into the fine sieve to catch the coarse particles.

5. Then, rinse the strainer and hang it over the second medium-sized bowl. Press a coffee filter into the strainer and pour the captured oil into the coffee filter, so that the remaining perishable and coarser particles are caught.

6. Allow the oil to drip through for about 1 hour or maybe more depending on how many remaining particles are in there. Once all the oil has passed through the coffee filter, transfer the collected amount into a sealable container or directly into an oil bottle. Store in the refrigerator for up to one week.

  • 80g butter (1/3 cup)
  • 110g white sugar (1/2 cup)
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon zest
  • juice of half a lemon
  • 120g yoghurt (1/2 cup)
  • 180g blueberries (1 cup)
  • 1 tbsp all-purpose flour

CRUMBLE

  • 100g all-purpose flour (1/2 cup)
  • 50g white sugar (1/4 cup)
  • 50g soft butter (1/4 cup)

GLAZE

  • 60g powdered sugar (1/2 cup)
  • juice of half a lemon
  • 1/2 tsp vanilla extract

PREPARATIONS

  • Preheat the oven to 175°C (350°F)
  • Line a rectangular baking dish with parchment paper.
  • Melt 80g (1/3 cup) butter in the microwave or in a small saucepan.
  • Toss the blueberries in a small bowl with 1 tablespoon of flour until all the blueberries are coated with flour.
  • For the crumble, mix together in a medium-sized bowl 50g (1/4 cup) white sugar, 50g (1/4 cup) softened butter, and 100g (1/2 cup) flour until small crumbs and larger clumps form. Set aside.
  • Zest the lemon and then halve the lemon.

COOKING

1. In a medium-sized bowl, mix together flour, baking powder, and salt and set it aside.

2. In a large bowl, whisk together melted butter, 2 eggs, sugar, vanilla extract, juice from half a lemon, and 1 tablespoon of lemon zest.

3. Add the flour mixture and yogurt to the butter-egg mixture and mix just until they start to come together. Now add the blueberries and stir only until no flour is visible.

4. Pour the batter into the baking pan, sprinkle the crumble over the top, and bake for 55 minutes. You can check if it’s done by inserting a clean knife or a skewer into the cake – if it comes out clean, the cake is ready. Let the cake cool on a wire rack.

5. Once the cake has cooled, in a small bowl, prepare the glaze. For this, mix 60g (0.5 cup) of powdered sugar, juice from the other half of the lemon, and 1/2 teaspoon of vanilla extract. The glaze should be creamy. You can thicken it by adding more powdered sugar or thin it by adding more lemon juice or milk. Spread the glaze over the cake and let it set for a few minutes.

  • 180 milliliters full-fat cow milk
  • 2 tsp dry active yeast
  • 1 tbsp honey
  • 1 egg
  • 3 tbsp butter, room-temperature
  • 1/2 tsp salt
  • 1 tbsp olive oil for greasing the bowl

BACON

  • 250 grams bacon
  • 2 tsp dried thyme
  • 1 tbsp honey
  • 1/4 tsp cayenne pepper
  • 60 milliliter white wine (or any kind of stock)

CARAMALIZED ONIONS

  • 600 grams yellow onions
  • 1 tbsp butter
  • 1 tsp salt
  • 60 milliliter white wine (or any kind of stock)

POPPY SEED GLAZE

  • 2 tbsp butter, melted
  • 1 tsp Dijon mustard
  • 2 tsp brown sugar
  • 1 tsp poppy seeds
  • 1/2 tsp garlic powder

OTHER INGREDIENTS

  • 250 grams cheddar cheese
  • 1 tsp butter for greasing the baking dish

Instructions

  1. To make the dough, warm the milk slightly to 35–40°C (95–104°F) and mix it with the dry active yeast and honey in a small container. Let it sit for about 5 minutes until bubbles form, indicating the yeast is active. Meanwhile, in a medium-sized bowl, combine the egg, butter, and salt. Stir in the milk-yeast mixture until well incorporated. Gradually add the flour in four additions, mixing thoroughly after each one. Once the dough is firm enough, transfer it to a clean work surface and knead with the remaining flour until it becomes smooth, elastic, and soft. This should take about 10 minutes. Lightly oil a large bowl and place the dough ball inside. Coat the dough lightly with a bit more olive oil, then cover the bowl with cling film and a clean towel. Let it rest in a warm place for one hour.
  2. To make the caramelized onions, peel the onions, cut them into thin half-circles, and cook them in a large pan with a tablespoon of butter and a pinch of salt over low to medium heat. Stir occasionally, allowing them to caramelize slowly. This takes about 30 minutes, depending on the desired color. Finish by deglazing with a splash of white wine and letting it reduce briefly. Alternatively, you can use stock instead of wine. Remove the onions from the pan and set aside in a bowl.
  3. For the bacon, use the same pan you caramelized the onions in (no need for additional fat). Fry the bacon until crispy, then add fresh or dried thyme, a pinch of cayenne pepper, and a drizzle of honey. Let everything caramelize over medium heat before deglazing with a splash of white wine or stock. Allow the liquid to evaporate, then set the bacon aside.
  4. Grease a baking dish with butter and set aside. Preheat the oven to 190°C / 375°F. Grate the cheddar cheese and set it aside. Dust a clean work surface with flour and place the dough ball on it. It should have doubled in size by now. Sprinkle the dough lightly with more flour and roll it out into a rectangle about 30×40 cm (12×16 inches). Spread half of the grated cheddar cheese evenly over the dough, followed by the caramelized onions and bacon. Top with the remaining cheese. Roll the dough tightly from the bottom upward, then cut it into 12 equal pieces. Place the rolls in the greased baking dish, cut side up. Cover the dish with cling film and a towel, and let it rest for another 30 minutes in a warm place.
  5. Bake the rolls in the preheated oven for about 30 minutes, or until golden brown. While the rolls bake, prepare the poppy seed glaze. In a small bowl, mix together melted butter, garlic powder, poppy seeds, brown sugar, and Dijon mustard.
  6. After 30 minutes of baking, remove the rolls from the oven and brush them evenly with the glaze. Return them to the oven and bake for another 5 minutes, being careful not to let them get too dark. Let the rolls cool for 15 minutes before serving. Enjoy!

  • Use a mortar and pestle to grind the cloves.
  • Grease the cake pan with 1 teaspoon of butter.
  • Peel the carrots and grate one half of the carrots coarsley and the other half into thin shreds.

COOKING

1. Sift flour, cinnamon, cloves, and baking soda through a sieve into a medium-sized bowl. Grate 1/4 teaspoon of fresh nutmeg into it. Set aside.

2. In a large bowl, mix sugar, oil, and vanilla extract. Then add the eggs and beat everything together briefly.

3. Next, gradually add the flour mixture and stir well. Finally, fold in the carrots.

4. Pour the batter evenly into the cake pan and bake for 20 minutes or until a toothpick inserted into the center comes out clean.

5. Let the cake cool in the pan on a rack for about 60 minutes, then invert it onto a cake stand or plate.

6. Meanwhile, prepare the frosting. Using a hand mixer, beat cream cheese and butter until fluffy and firm. Gradually add powdered sugar and vanilla extract, continuing to beat until it reaches a firm consistency. Take 1-2 tablespoons of the frosting and put them into two small separate bowls.

7. Once the cake is cool, spread the frosting over the cake and smooth it out.

8. Now color the remaining frosting in the two small bowls with green and orange food coloring to the desired intensity. Fill each colored frosting into a small plastic bag and cut a tiny opening in the corner of each bag. Then, with very light pressure, draw the carrot design on the white frosting. Keep the cake in the fridge until serving.

  • 50g cheddar cheese, grated (1/2 cup)

  • 1 brokkoli (230g / 8 oz)
  • 200g baby spinach (7 oz)
  • 2 leeks (250g / 8 oz)
  • 180g green olives (6 oz)
  • 200ml vegetable stock (1 cup)
  • 1 bunch basil
  • 2 shallots
  • 2 garlic cloves
  • 2 tbsp olive oil
  • juice of 1 lemon
  • salt & pepper to taste

PREPARATIONS

  • Peel shallots, halve them, and slice thinly.
  • Peel garlic cloves and either press or finely chop them.
  • Halve the leek, wash, and cut into fine strips.
  • Cut the broccoli florets, wash, and if necessary, chop into bite-sized pieces.
  • Slice the olives.
  • Cut the basil into fine strips.
  • Grate the Parmesan and Cheddar cheese.
  • Prepare the béchamel sauce. I used 70g (2.5 oz) butter, 70g (2.5 oz) flour, and 1 liter (4 cups) milk, since lasagna needs a more liquidy sauce to ensure the pasta sheets soften in the oven.

COOKING

1. Heat 2 tablespoons of olive oil in a medium-sized pot over medium heat. Cook the shallots until soft. Then add the leek and garlic. Mix well and cook until soft for a few minutes.

2. Add broccoli, olives, and basil, then pour in the vegetable broth. Cover and let it cook for 5-10 minutes, so the broccoli becomes tender but still has a bit of a bite.

3. Remove the lid and add the spinach and lemon juice. Stir everything once and let the spinach wilt slightly. Season with salt and pepper.

4. Preheat the oven to 200°C (400°F).

5. Now it’s time to layer the lasagna. Start with two large ladles of sauce at the bottom of your baking dish. Spread the sauce evenly. Then add a layer of pasta sheets. Next, spread a portion of the vegetables evenly. Follow with a layer of finely grated Parmesan. Continue in the following order: pasta sheets, béchamel, vegetables, Parmesan until all the vegetables (including the liquid in the pot) are used up. Finish with a final layer of pasta sheets and spread the remaining béchamel sauce over them completely. Finally, sprinkle 50g of grated Cheddar on top.

Here’s the entire sequence more efficiently: Sauce, pasta sheets, vegetables, Parmesan, pasta sheets, sauce, vegetables, Parmesan, pasta sheets, sauce, vegetables, Parmesan, pasta sheets, sauce, Cheddar.

6. Cover the dish with a layer of aluminum foil and bake in the oven for 25 minutes. After 25 minutes, remove the foil and bake for another 20 minutes, or until the cheese is crispy and golden brown.

7. Let the lasagna rest for 10 minutes, then enjoy.

INGREDIENTS

INFUSED MILK

  • 700ml full-fat cow milk (3 cups)
  • 1 white onion
  • 3-4 parsley stems
  • 1 bay leaf
  • 1 tsp black pepper corns

BÉCHAMEL SAUCE

  • 70g butter (2.5 oz)
  • 70g all-purpose flour (2.5 oz)
  • 1 garlic clove
  • 1/2 tsp salt
  • 3/8 tsp white pepper
  • 1/2 nutmeg

  • Peel the onion and cut it in half.
  • Peel the garlic clove and cut it into quarters.

COOKING

1. In a small pot, bring the milk to a simmer with the onion halves, parsley, bay leaf, and peppercorns over medium heat. Lower the temperature and let it simmer gently for 10 minutes.

2. After 10 minutes, remove the pot from the heat and let it sit, covered, for about 60-90 minutes to infuse.

3. Place a strainer over a measuring cup and pour the milk through it. Discard the solids. Set the strained milk aside.

4. In a medium-sized pot, melt the butter over medium heat. Add the quartered garlic clove and let it sizzle in the butter briefly, then remove it.

5. Add all the flour to the melted butter and stir quickly with a wooden spoon until smooth. The mixture should resemble a paste. Take the pot off the heat and whisk in the first 100ml (1/2 cup) of milk until smoothly combined. Return the pot to the stove and bring to a brief boil while stirring constantly – this will happen quickly. Remove from the heat again and add the next 100ml (1/2 cup) of milk. Stir well, return to the heat, and let it come to a boil again. Continue this process with the remaining milk, adding 100ml (1/2 cup) at a time: remove from heat, add milk, stir, return to heat, bring to boil, and repeat.

6. After about 25 minutes, the sauce should be similar in consistency to melted cheese and you shouldn’t taste the flour anymore. Now, take the sauce off the heat and season it. Grate in some fresh nutmeg and add 3/8 tsp of salt and 1/4 tsp of pepper.
