  • sealable container (oil bottle)
  • ice cubes
  • coffee filter

Ingredients

  • 150 grams carrot
  • 250 milliliters unrefined/cold-pressed rapeseed oil

Instructions

  1. Peel the carrots, roughly chop them and put them into the blender. Pour in the oil. Blend on the highest setting until there are only tiny pieces of the carrots left.
  2. Pour the mixture from the blender into a medium-sized pot and heat it over medium heat to a temperature of about 104°-106°C (219°-222°F), and maintain this temperature for the next 40 minutes. Stir occasionally, making sure the temperature remains steady and nothing gets burned.
  3. Prepare a bowl large enough to fit a medium-sized pot, and fill it with cold water and a handful of ice cubes. Also, hang a fine sieve strainer over one medium-sized bowl and another fine sieve strainer, with a coffee filter inside it, over another medium-sized bowl.
  4. Now, place the pot in the ice water and stir to cool the oil quickly. Once the oil is almost cold, remove the pot from the water and pour the oil into the prepared fine sieve to catch the coarse particles.
  5. Then, pour the oil into the second sieve, which is equipped with a coffee filter, to catch the remaining finer particles.
  6. Allow the oil to drip through for about 1 hour or maybe less depending on how many remaining particles are in the coffee filter. Once all the oil has passed through the coffee filter, transfer the collected amount of oil into a sealable container or directly into an oil bottle. Store in the refrigerator for up to one week.

Ingredients

  • 265 grams chickpeas (drained)
  • 2 garlic cloves
  • juice of 1/2 lemon
  • 60 grams tahini
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp - 1/2 tsp cumin
  • 4 ice cubes
  • 200 grams beetroot (cooked)

Instructions

PREPARATIONS

  • Pour the canned chickpeas into a sieve and rinse with cold water until the Aquafaba stops foaming. You can save the Aquafaba for other recipes.
  • Peel the garlic cloves.
  • Halve the lemon.
  • Cut the beetroot into chunks. If using fresh beetroot, peel it first.

INSTRUCTIONS

  1. Pour the chickpeas into the food processor. Add the garlic cloves, tahini, salt, olive oil, and cumin. Blend on medium until you get a chunky but creamy consistency.
  2. While the machine is running, gradually add the ice cubes. Blend for about 1-3 minutes (depending on your machine) until smooth and creamy. Adjust the seasoning with salt and lemon juice if needed.
  3. Add the beetroot chunks and blend again until well combined.
  4. Transfer the hummus to a bowl and garnish with olive oil, chickpeas, herbs, and paprika as desired.

  • 40 grams soft butter
  • 40 grams white sugar
  • 1/4 tsp vanilla extract
  • pinch of salt
  • 75 grams all-purpose flour
  • 2 tbsp milk
  • 35 grams semi-sweet chocolate

Instructions

  1. Microwave the flour in one of the bowls on high for 45 seconds. The flour should reach about 75°C/165°F to kill any bacteria and make it safe to eat raw. If you don’t have a microwave, you can bake the flour in the oven at 170°C/338°F for about 10 minutes.
  2. Meanwhile, mix the softened butter, sugar, vanilla extract, and salt until creamy. Add the milk and mix again.
  3. Now, add the flour and mix everything into a cookie dough.
  4. Fold in the chocolate chips and either snack on it right away or chill the bowl in the fridge for 10-15 minutes for a firmer texture.

  • 3 apples (best use Granny Smith or Honeycrisp, but any other type will do)
  • 25 grams sugar
  • 1 tsp lemon juice
  • 1 tbsp corn starch
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
CRUMBLE
  • 100 grams all-purpose flour
  • 80 grams sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 85 grams butter

Instructions

PREPARATIONS

  • Preheat the oven to 190C° (375F°)
  • Peel 3 apples, remove the core, cut into bite-sized pieces and put the pieces in a bowl.
  • Melt 85g (4 tbsp) butter in a saucepan or in the microwave.

INSTRUCTIONS

  1. For the filling pour 1 tsp lemon juice over the chopped apples and mix. Then add sugar, cornstarch, salt, cinnamon and vanilla extract. Mix everything together.
  2. Place the apples in the baking dish and spread evenly.
  3. In the same bowl, mix the crumble. Add all-purpose flour, sugar, baking powder, salt, cinnamon and the melted butter. Mix everything together well to form a dough-like consistency. Place the bowl in the fridge for about 10 minutes.
  4. Crumble the mixture over the apples and spread evenly.
  5. Place the baking dish in the oven and bake at 190C° (375F°) for 35 minutes.
  6. Now you can top it with your favorites: This tastes delicious with warm vanilla sauce or cold vanilla ice cream. You can also add almonds on top. Make the apple crumble the way you like it best.

  3. Remove the pot from the heat and puree the mixture until smooth using an immersion blender.

  • 2 romaine lettuces
  • 1 garlic clove
  • 20 grams parmesan
  • 8 grams Worcestershire sauce
  • 1 tsp dijon mustard
  • 100 grams yogurt
  • 12 grams red wine vinegar
ROASTED TOMATOES
  • 250 grams cocktail tomatoes
  • 1 tbsp olive oil
  • 1 garlic clove
GNOCCHI
  • 400 grams soft gnocchi
  • 2 tbsp olive oil
TOPPINGS
  • chives
  • parmesan
  • black pepper

Instructions

PREPARATIONS

  • Wash tomatoes, lettuce, and chives.
  • Chop the chives into fine rolls and cut the lettuce into bite-sized pieces.
  • Peel the garlic cloves and finely chop or press them.
  • Grate the Parmesan finely.
  • Line a baking tray with parchment paper.
  • Preheat the oven to 200°C/392°F.

INSTRUCTIONS

  1. Place the tomatoes on the baking tray. Mix with 1 tablespoon of olive oil and a pressed garlic clove, and roast in the oven for about 15 minutes.
  2. Heat 2 tablespoons of olive oil in a medium frying pan and sauté the gnocchi until crispy.
  3. Meanwhile, divide the Romaine lettuce between two bowls. In a small bowl, thoroughly mix all the ingredients for the dressing. Evenly distribute the dressing over the lettuce in the two bowls, toss well to coat the lettuce with the dressing.
  4. Remove the tomatoes from the oven and distribute them and the gnocchi among the bowls. Toss briefly. Top everything with chives and Parmesan and serve immediately.
