ABOUT THE RECIPE

The „Stramme Max“ is originally a German dish traditionally served as a slice of sourdough bread with ham and fried eggs. There are countless variations and modifications, as it is super simple and makes a delicious breakfast. Here you will find my version as a slightly crisper one with fresh tomatoes and my pickle & red onion salsa as well as a freshly baked ciabatta bun. Let’s enjoy this bun of happiness.

How to serve:
To serve Strammer Max, start by toasting a slice of your favorite bread. Fry eggs to your desired doneness. Place the ham and eggs on the toasted bread. Add a touch of freshness with sliced tomatoes and a zesty pickle and red onion salsa. Serve it open-faced for a picturesque presentation.

How to store:
While Strammer Max is best enjoyed fresh, you can prepare components in advance. Store ham and eggs separately in airtight containers in the refrigerator. Assemble just before serving to maintain the ideal texture. If you have leftover Strammer Max, refrigerate it, but be aware that the bread may lose its crispiness upon reheating.

  • Prepare the pickles & red onion salsa.
  • Cut the ciabatta bun lengthwise down the middle.
  • Cut the tomato into thin slices.
  • Cut the chives into rolls.

    COOKING

    1. Melt 1 teaspoon of butter in a pan, crack in 2 eggs and fry over a medium heat until the egg whites are fully cooked but the yolks are still runny.

     2. Meanwhile, spread the rest of the butter and sweet mustard on the bun halves. Now place the ham and tomato slices on top of it.

    3. Place the fried egg on top, season with salt and pepper and top with the pickles and red onion salsa and some fresh chives.

    • 1/2 tsp salt
    • 50ml olive oil (10 tsp)
    • 100g flaxseeds (1/2 cup + 2 tbsp)
    • 200g mixes nuts (1 cup + 1/3 cup)
    • 100g sunflower seeds (1/2 cup + 1/4 cup)
    • 50g pumpkin seeds (1/4 cup)
    • 50g white sesame (1/3 cup + 2 tsp)

    • ovenproof dish – I used a loaf pan 25x10cm (10×4 inch)
    • Preheat the oven to 160°C (320°F).
    • Line the loaf tin with baking paper.

    COOKING

    1. Whisk the 5 eggs with 1/2 tsp salt in a bowl. Meanwhile, add the 50ml (10 tsp) olive oil and mix well.

    2. Pour 100g (1/2 cup + 2 tbsp) flaxseeds , 200g (1 cup + 1/3 cup) mixed nuts, 100g (1/2 cup + 1/4 cup) sunflower seeds, 50g (1/4 cup) pumpkin seeds and 50g (1/3 cup + 2 tsp) white sesame seeds into the bowl with the egg mixture and mix everything together.

    3. Pour the entire mixture onto the baking paper in the loaf tin and spread evenly.

    4. Bake in the oven on the middle shelf for 60 minutes. The bread can be eaten warm, but make sure that the slices are not cut too thinly. Once the bread has cooled, thin slices can also be cut.

    • Wash the apple and cut off three slices. Remove the core.
    • Cut three slices off the Camembert.
    • Wash the lettuce and cut off several leaves.

    Mushroom Filling

    • 1 shallot 
    • 1 tbsp butter
    • 180g mushrooms (1.5 cups) 
    • 1 tsp dried thyme
    • 1 tbsp fresh parsley
    • 3 tbsp port wine (or any other red wine) 
    • salt
    • pepper

    • 1 store-bought puff pastry
    • 200g beef fillet (7 oz.) 
    • 100g prosciutto di parma (3.5 oz.) 
    • 1 tbsp butter
    • 1 tsp dijon mustard
    • 1 egg
    • salt
    • pepper

    PREPARATIONS

    Recommended Equipment

    • food processor if necessary
    • small bowl
    • small pan
    • kitchen basting brush
    • Cut the mushrooms into very small pieces with a knife or chop briefly in a food processor.
    • Cut the shallot into very small pieces or chop briefly in a food processor.
    • Finely chop the parsley.
    • Cut the puff pastry into 16 equal pieces.
    • Cut or tear the Prosciutto di Parma into 16 equal pieces.
    • Crack an egg into a bowl and whisk it together.

    COOKING

    1. Fry the mushrooms in a pan without adding any fat so that the water can evaporate and the mushrooms do not become mushy and brown. Once the mushrooms are lightly browned, add a tablespoon of butter to the pan.

    2. Secondly fry the finely chopped shallot in the pan with the mushrooms and melted butter until soft. When the onions are soft, deglaze everything with 3 tablespoons red wine and reduce for approx. 5-8 minutes. There should be no liquid left on the bottom, but everything should be absorbed into the mushrooms. Next, add the chopped fresh parsley, dried thyme and salt & pepper to taste to the pan. Set the mushroom mixture aside.

    3. Now sear the fillet of beef very briefly on all sides in a pan with 1 tbsp butter. Remove the meat from the pan and cut into 16 equal pieces. Set aside.

    4. First place the Prosciutto di Parma on the individual pieces of puff pastry so that the edges of the pastry are still visible around the ham. Next, place approx. 1/2 tsp of the mushroom mixture on each piece of ham. Then place a piece of beef fillet on top of the mushroom mixture. Brush the fillet of beef with a little mustard. Now roll up the pieces and seal the ends.

    5. Preheat the oven to 200°C (390°F) and place the Beef Wellington finger food in the fridge until then.

    6. When the oven is preheated take the Beef Wellington Finger Food pieces out of the fridge and place on a baking tray lined with baking paper. Make diagonal incisions in all the pieces and brush with the beaten egg.

    7. Finally bake in the oven at 200°C (390°F) for about 10 minutes or until lightly browned on the outside. If the pieces of meat are very thin, it cannot be guaranteed that the meat will be cooked medium. But even if the meat is not medium, it will be very tender and fall apart in the mouth. My Cumberland sauce goes wonderfully with this.
