  • 2 red onions
  • 400 grams tomatoes
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cardamom powder
  • 1/2 tsp pepper
  • 1/4 tsp cloves powder
  • 1/4 tsp salt
  • 1 bay leaf
  • 1 tbsp ginger, grated
  • 4 garlic cloves
  • 1/2 tsp dried chili flakes
  • 1/4 tsp cayenne pepper
  • 2 tbsp tomato paste
  • 250 milliliter vegetable stock

COCONUT SAUCE

  • 1 tbsp avocado oil
  • 1/2 tsp cumin
  • 1/2 tsp mustard seeds
  • 4 garlic cloves
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 200 grams coconut milk

CHICKEN

  • 400 grams boneless, skinless chicken thighs
  • 1 tbsp turmeric powder
  • 1 tbsp avocado oil

TOPPINGS

  • lime juice
  • fresh cilantro
  • 2 tbsp yogurt
  • 2 tbsp passionfruit purée

Instructions

  1. Start by preparing the chili lime garlic naan according to this recipe, up to Step 4. Once 40 minutes of resting time have passed, proceed with Step 2 of this recipe.
  2. Finely dice the onions and tomatoes, keeping them separate.
  3. Coat the chicken in turmeric (gloves recommended, as turmeric stains easily). Heat avocado oil in a large pan and sear the chicken on both sides. It doesn’t need to be fully cooked yet, as it will finish simmering in the sauce. Remove from the pan and set aside.
  4. In the remaining oil, add ground cinnamon, cardamom, black pepper, and ground cloves. Toast briefly until fragrant. Add the diced onions and a bay leaf, season generously with salt, and let them soften. Meanwhile, peel and finely chop the ginger and garlic, then add them to the pan. Let everything cook down gently.
  5. Once softened, add coriander powder, chili powder, and cayenne pepper, toasting briefly. Stir in tomato paste and diced tomatoes, then pour in vegetable broth. Cover with a lid and let it simmer until the tomatoes break down. Transfer everything to a blender and blend until smooth. Keep the mixture in the blender while reheating the pan.
  6. Continue preparing the naan from Step 5 to Step 6, allowing the dough to rest for another 10-15 minutes.
  7. Heat more avocado oil in the pan and toast ground cumin and mustard seeds until they start popping. Add pressed garlic, turmeric, and garam masala, stirring until fragrant. Pour in the coconut milk and mix well. Then, return the blended tomato mixture to the pan, stirring until combined. Add the seared chicken, cover with a lid, and bring to a simmer.
  8. Once simmering, remove the lid and stir in more garam masala and a splash of lime juice. Optionally, add a tablespoon of butter for extra richness. Let everything simmer over medium heat for another 20 minutes until the chicken is fully cooked.
  9. While the dish simmers, complete the naan recipe from Step 7 onward, so it’s freshly served.
  10. Remove the pan from the heat and top the chicken with yogurt, passionfruit purée, and fresh cilantro. Serve with warm naan and enjoy!

  • 120 grams butter, soft
  • 100 grams brown sugar
  • 50 grams white sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 220 grams all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 15 grams freeze-dried raspberries

PASSIONFRUIT GANACHE

  • 200 grams white chocolate
  • 100 grams heavy cream
  • 60 grams passionfruit purée

Instructions

  1. Add soft butter, brown sugar, white sugar, and vanilla extract to the mixing bowl of a stand mixer. Beat until light and fluffy.

  2. Mix in the egg just until combined. Then, add flour, salt, baking powder, and baking soda, mixing until no streaks of flour remain. Be careful not to overmix.

  3. Divide the dough into two equal portions. Keep one half in the mixer and set the other aside. Grind the freeze-dried raspberries into a fine powder, then mix them into the dough in the mixer. You should now have one pink and one yellow dough.

  4. Scoop equal portions of both doughs using a small cookie scoop. Press the two differently colored balls together, tear them apart in the middle, and press them back together for a marbled look. Shape into round balls, place them on a parchment-lined tray, and refrigerate.

  5. Heat the heavy cream in a small saucepan until it starts forming small bubbles around the edges. Meanwhile, finely chop or grate the white chocolate and place it in a bowl. Pour the hot cream over the chocolate and let it sit for 3-4 minutes before stirring until smooth. Mix in the passionfruit purée until fully combined. Cover the ganache with plastic wrap directly on the surface to prevent skin from forming and refrigerate for at least 2 hours or overnight until set.

  6. Once the ganache is set, preheat the oven to 175°C / 350°F. Place the chilled cookie dough balls on a parchment-lined baking sheet, leaving enough space between them. Bake for 13 minutes, then let them cool on a wire rack.

  7. Once firm, transfer the ganache to a mixing bowl and whip until it reaches a buttercream-like consistency. Fill a piping bag fitted with a nozzle and pipe a swirl of ganache onto the center of each cooled cookie. Sprinkle with crushed freeze-dried raspberries for decoration.

  • 1 egg
  • 4 tbsp panko bread crumbs

  • avocado oil, for frying

SWEET & SOUR GLAZE

  • 40 grams passionfruit purée
  • juice from half a lemon
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1 small yellow onion
  • 1 tsp ginger
  • 45 grams white sugar
  • 1/2 fresh chili
  • 1/4 tsp salt
  • 1/8 tsp sesame oil

YOGURT CILANTRO SLAW

  • 75 grams white cabbage
  • 1 scallion
  • a few leaves fresh parsley
  • juice from half a lemon
  • salt & pepper

OTHER INGREDIENTS

  • 4 slices brioche bread
  • 1 tbsp butter

Instructions

  1. Prepare the passionfruit chutney first. Add passionfruit purée, lime juice, two pressed garlic cloves, olive oil, half a finely chopped onion, finely chopped ginger, white sugar, half a chopped fresh chili, salt, and sesame oil to a small pot. Stir well and let it simmer over medium heat for about 10-15 minutes, until thickened.
  2. While the chutney simmers, make the slaw. Thinly slice the white cabbage, slice the scallions, and finely chop the parsley. Add everything to a large salad bowl and mix with yogurt, lime juice, salt, and pepper.
  3. Prepare the coating for the chicken. Set up three shallow bowls: Fill one with flour, crack an egg into the second and whisk with some ground pepper, and mix breadcrumbs, panko, and salt in the third. Place the chicken breasts between two layers of plastic wrap and pound them thin. Dredge each piece in flour, dip in the egg, and coat well with the panko mixture, pressing firmly so the breading sticks. Set aside on a plate.
  4. Before frying the chicken, toast the brioche. Spread a thin layer of butter on one side of each brioche slice and toast in a pan until golden and crispy on both sides. Remove from the pan and set aside.
  5. Heat about a finger’s depth of oil in the same pan to 180°C / 356°F. Fry the breaded chicken fillets for 3-4 minutes per side until golden brown and crispy. Transfer to a wire rack to drain excess oil.
  6. Assemble the sandwiches. Spread the prepared slaw onto two slices of toasted brioche.
  7. Pour the passionfruit chutney into a shallow bowl. Dip the crispy fried chicken fillets in the chutney, coating both sides completely, then place them on top of the slaw. Finish with the second slice of brioche. Cut the sandwiches in half and enjoy!

TOPPINGS

  • 50 grams pecans
  • pinch of salt
  • 1 passionfruit

Instructions

  1. Start by peeling the pears and cutting them into small pieces. Add them to a small pot with vanilla extract, honey, a pinch of salt, and lemon juice. Let them simmer over medium heat for 15 to 20 minutes.
  2. While the compote is cooking, combine oats, milk, agave syrup, a pinch of salt, and vanilla extract in a second small pot. Cook over medium heat for 10 to 15 minutes until creamy.
  3. Meanwhile, add dates, a pinch of salt, and pecans to a food processor. Pulse until finely chopped and crumbly.
  4. Cut open a fresh passionfruit and set the pulp aside.
  5. Once the porridge and pear compote are ready, divide the porridge between two bowls, spoon the pear compote on top, and sprinkle with the date-pecan crunch.
  6. Finish by adding the fresh passionfruit on top and enjoy.

PASSIONFRUIT GLAZE

  • 100 grams passionfruit purée
  • 100 grams white sugar
  • 25 grams water

FRENCH TOAST

  • 4 slices brioche bread
  • 75 grams cow milk
  • 1 egg
  • 1 tsp vanilla extract
  • butter for frying
  • sugar for the crust

TOPPING

  • 3 tbsp yogurt
  • 1 tsp vanilla extract
  • 2 passionfruits

Instructions

  1. In a small saucepan, combine the passion fruit purée, water, and sugar. Stir and bring to a gentle simmer over medium heat. Let it cook for 15–20 minutes until it thickens into a syrup-like consistency. Remove from heat and let it cool slightly. It will thicken a bit more as it cools.
  2. In a small bowl, mix the yogurt with vanilla extract (or fresh vanilla) until smooth. Set aside.
  3. In a shallow dish, whisk together the eggs, milk, and vanilla extract. Dip each slice of brioche into the egg mixture, making sure both sides are evenly coated. In a pan over medium heat, melt the butter and cook the brioche slices until golden brown and crispy on both sides. Remove from the pan.
  4. Sprinkle a thin layer of sugar over each slice of French toast. Using a kitchen torch, caramelize the sugar until it turns golden and crisp.
  5. Place two slices of caramelized French toast on a plate. Top with a generous dollop of vanilla yogurt and drizzle with the passion fruit glaze.
  6. Cut a fresh passion fruit in half and scoop the pulp over the toast for an extra burst of flavor. Serve immediately and enjoy!
