EVERY RECIPE DESERVES

A Little Love Letter

There are recipes that stay with you for so long, they eventually feel like part of your own biography. My Ham & Cheese Croissant is one of those. Maybe because, at its core, it has always been there, long before I knew cooking even had rules.

As a kid, all I ever wanted was to invent something. And in my mind, I was absolutely convinced: I did. My “invention” was a slice of ham folded in half, a slice of cheese tucked inside, and the whole thing pan-fried on both sides. I swear, I felt like the greatest chef alive. Today, that childhood creation has gotten a little upgrade: a crisp, buttery croissant filled with good ham, melted cheese, and a creamy topping that ties everything together. Sweetness, savoriness, a little depth, that balance is what makes this so unbelievably good. It’s comfort food without feeling heavy. Quick to make, yet it still feels like a tiny moment of luxury.

I serve it in the morning when I want to treat myself. At lunch, when hunger suddenly hits harder than expected. And most of all when friends are coming over. Slice the croissants, add ham and cheese, sprinkle in some chives, close them, spread the cream on top, pop them in the oven and a few minutes later, the whole kitchen smells like warm, buttery happiness. It’s the perfect “I thought of you” kind of recipe. Maybe that’s the real magic of this recipe: That a childhood fantasy turned into a snack that makes people happy and just a little bit in love.

Description

GOOD TO HAVE ON HAND

  • medium-sized bowl
  • oven-safe pan

Ingredients

Units Scale
  • 4 boneless chicken thighs
  • 1/4 cup greek yogurt
  • juice of 1 lemon
  • 1/2 tbsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 - 1/4 tsp chili flakes
  • 2 tbsp olive oil
  • 1 tsp fresh thyme
  • 2 tsp butter

Instructions

PREPARATIONS

  • In a medium-sized bowl, mix the following ingredients into a marinade: yogurt, lemon juice, peeled and pressed garlic cloves, chili flakes, oregano, salt, and pepper.
  • Place the chicken thighs in the bowl and rub them thoroughly with the marinade. Let the thighs marinate in the refrigerator for at least 1 hour up to overnight.

INSTRUCTIONS

  1. Preheat the oven to 200°C / 392°F.
  2. Remove the chicken thighs from the refrigerator and place them skin-side up in an ovenproof pan. Slice a lemon and arrange the slices between the chicken thighs in the pan. Place about 1/2 teaspoon of butter on each thigh and drizzle 1-2 tablespoons of olive oil over everything.
  3. Bake the pan with the thighs in the oven for about 45 minutes uncovered. Depending on the size of the thighs, it might take a bit longer. Turn on the broiler 5-10 minutes before the end of cooking to get the chicken really crispy. A delicious sauce will naturally form in the pan while baking.
  4. Serve the hot thighs and the sauce immediately. They go best with salad, potatoes, or rice. Enjoy your piece of bliss!

GOOD TO HAVE ON HAND

  • sharp knife
  • cutting board
  • large pan

Ingredients

Units Scale
FILLING
  • 400 grams lean minced beef
  • 1 tbsp olive oil
  • 1 tsp chili flakes
  • 1/2 tsp oregano
  • 1/2 cumin
  • 1/2 garlic powder
  • 1/2 onion powder
  • 1/2 tsp salt
  • 1/2 cayenne pepper
  • 1/2 ground black pepper
  • 1 tbsp tomato paste
  • 250 milliliters beef stock
  • 125 grams shredded mozzarella
  • 125 grams shredded cheddar
TORTILLAS
  • 6 medium-sized tortillas
  • 3 tsp olive oil
TOPPINGS
  • 2 limes
  • cilantro
  • 200 grams creme fraiche
  • 200 grams salsa

Instructions

  1. Wash the cilantro, pluck the leaves from the stems, and roughly chop them.
  2. Wash the limes and cut them into quarters.
  3. Mix the grated mozzarella and grated cheddar in a bowl.
  4. Heat a large pan over medium heat and add 1 tbsp olive oil. Put the ground beef into the pan and season it with 1 teaspoon of chili powder, and ½ teaspoon each of oregano, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Cook the meat until it forms a dark crust at the bottom of the pan. Then add 1 heaping tablespoon of tomato paste to the meat, mix everything together, and let it cook for 1-2 minutes. Pour beef broth into the pan to deglaze it, scrape off the crust from the bottom, and let everything simmer for about 10 minutes until the broth forms a creamy sauce around the meat.
  5. Meanwhile, lay out 6 tortilla wraps side by side and spread half of the cheese on one half of each tortilla, leaving the other half free.
  6. Spread the meat directly from the pan onto the cheese on each tortilla. Wipe the pan clean and place it back on the stove.
  7. Now, spread the second half of the cheese on top of the meat and use a spoon to distribute the filling to the edge of half of each tortilla. Fold the empty half of the tortilla over the filled half. Press down firmly.
  8. Cook two of the filled quesadillas side by side in the pan with 1 teaspoon of olive oil on both sides over medium heat until the tortilla becomes crispy golden brown and the cheese inside is melted. Remove from the pan and cut in half.
  9. Place three pieces of the quesadillas on each plate, along with two lime wedges, and sprinkle with cilantro. Serve with your favorite salsa and sour cream for dipping.

Bacon Onion Cheese Rolls & Poppy Seed Glaze

  • Author: Kimberly
  • Total Time: 2 hrs
  • Yield: 12

Description

GOOD TO HAVE ON HAND

  • baking dish – my used measurements were 20x26cm (8×10 inch)
  • sharp knife
  • cutting board
  • medium-sized bowl
  • whisk
  • small bowl
  • pastry brush
  • spatula
  • large pan

Ingredients

Units Scale
DOUGH
  • 450 grams all-purpose flour
  • 180 milliliters full-fat cow milk
  • 2 tsp dry active yeast
  • 1 tbsp honey
  • 1 egg
  • 3 tbsp butter, room-temperature
  • 1/2 tsp salt
  • 1 tbsp olive oil for greasing the bowl
BACON
  • 250 grams bacon
  • 2 tsp dried thyme
  • 1 tbsp honey
  • 1/4 tsp cayenne pepper
  • 60 milliliter white wine (or any kind of stock)
CARAMALIZED ONIONS
  • 600 grams yellow onions
  • 1 tbsp butter
  • 1 tsp salt
  • 60 milliliter white wine (or any kind of stock)
POPPY SEED GLAZE
  • 2 tbsp butter, melted
  • 1 tsp Dijon mustard
  • 2 tsp brown sugar
  • 1 tsp poppy seeds
  • 1/2 tsp garlic powder
OTHER INGREDIENTS
  • 250 grams cheddar cheese
  • 1 tsp butter for greasing the baking dish

Instructions

  1. To make the dough, warm the milk slightly to 35–40°C (95–104°F) and mix it with the dry active yeast and honey in a small container. Let it sit for about 5 minutes until bubbles form, indicating the yeast is active. Meanwhile, in a medium-sized bowl, combine the egg, butter, and salt. Stir in the milk-yeast mixture until well incorporated. Gradually add the flour in four additions, mixing thoroughly after each one. Once the dough is firm enough, transfer it to a clean work surface and knead with the remaining flour until it becomes smooth, elastic, and soft. This should take about 10 minutes. Lightly oil a large bowl and place the dough ball inside. Coat the dough lightly with a bit more olive oil, then cover the bowl with cling film and a clean towel. Let it rest in a warm place for one hour.
  2. To make the caramelized onions, peel the onions, cut them into thin half-circles, and cook them in a large pan with a tablespoon of butter and a pinch of salt over low to medium heat. Stir occasionally, allowing them to caramelize slowly. This takes about 30 minutes, depending on the desired color. Finish by deglazing with a splash of white wine and letting it reduce briefly. Alternatively, you can use stock instead of wine. Remove the onions from the pan and set aside in a bowl.
  3. For the bacon, use the same pan you caramelized the onions in (no need for additional fat). Fry the bacon until crispy, then add fresh or dried thyme, a pinch of cayenne pepper, and a drizzle of honey. Let everything caramelize over medium heat before deglazing with a splash of white wine or stock. Allow the liquid to evaporate, then set the bacon aside.
  4. Grease a baking dish with butter and set aside. Preheat the oven to 190°C / 375°F. Grate the cheddar cheese and set it aside. Dust a clean work surface with flour and place the dough ball on it. It should have doubled in size by now. Sprinkle the dough lightly with more flour and roll it out into a rectangle about 30×40 cm (12×16 inches). Spread half of the grated cheddar cheese evenly over the dough, followed by the caramelized onions and bacon. Top with the remaining cheese. Roll the dough tightly from the bottom upward, then cut it into 12 equal pieces. Place the rolls in the greased baking dish, cut side up. Cover the dish with cling film and a towel, and let it rest for another 30 minutes in a warm place.
  5. Bake the rolls in the preheated oven for about 30 minutes, or until golden brown. While the rolls bake, prepare the poppy seed glaze. In a small bowl, mix together melted butter, garlic powder, poppy seeds, brown sugar, and Dijon mustard.
  6. After 30 minutes of baking, remove the rolls from the oven and brush them evenly with the glaze. Return them to the oven and bake for another 5 minutes, being careful not to let them get too dark. Let the rolls cool for 15 minutes before serving. Enjoy!
