  • 50g sweet & sour sauce (1/4 cup)
  • 1 tbsp sriracha sauce
  • 1 tbsp lemon juice
  • 1 tsp crispy chili oil
  • 1 garlic clove

  • 300g jasmine rice (1.5 cups)
  • 400ml water (1 + 3/4 cups)

  • Preheat the oven to 180°C (350°F)
  • Cut the spring onions into thin strips.
  • Cut the lemon in half.
  • Peel the garlic clove.
  • Pat the salmon dry and cut into large pieces.

    1. Wash the rice until the water runs clear. Then cook the rice with 400ml (1 3/4 cups) of fresh water in the rice cooker. If you don’t have a rice cooker, you can cook the rice in a pot with a lid. To do so bring to a boil and then finish cooking on the lowest setting with the lid on.

    2. In a medium-sized bowl, mix together the marinade for the salmon. Stir together the olive oil and Cajun seasoning and add the salmon bites. Stir everything well and then place the salmon pieces on a baking tray lined with baking paper.

    3. Meanwhile, prepare the sauce. In a small bowl, mix together the mayonnaise, sweet and sour sauce, Sriracha, lemon juice, crispy chili oil and crushed garlic.

    4. Remove the salmon from the oven after 5-7 minutes. Now divide the rice into two bowls, place the salmon bites on top and spread the sauce over them. Finally, top with spring onions.

    FOR 3 PORTIONS

    RISOTTO

    • 200g risotto rice (7 oz)
    • 400ml broth, vegetable or chicken (1 + 1/2 cups)
    • 200ml dry white wine (7 fl oz)
    • 300ml water (1 + 1/4 cups)
    • 100g parmesan (3.5 oz)
    • 1 white onion
    • 2 tbsp olive oil
    • 1 tsp butter
    • salt & pepper to taste

     

    MUSHROOMS

    • 250g mushrooms of your choice (9 oz) – I used brown champignons, oyster mushrooms & shimeji mushrooms
    • 50ml dry white wine (1/4 cup)
    • 1 stem rosemary
    • 1 stem sage
    • 1 stem thyme
    • 2 tbsp olive oil
    • 1 tsp butter
    • salt & pepper to taste

    PREPARATIONS

    • Finely grate the Parmesan.
    • Clean the mushrooms and cut half of them into large pieces and the other half into small pieces.
    • Cut the onion into small pieces.
    • Pluck the herb leaves from the stalks and chop finely.

      PASSIVE: –

      COOKING

      1. Heat 1 tsp butter and 2 tbsp olive oil in a pan. Add the mushrooms and fry for approx. 10 minutes until golden brown. Add the finely chopped herbs, stir and fry briefly. Then deglaze with 50ml white wine and reduce until there is no more liquid in the pan. Season the mushrooms with salt and pepper. Put the pan to aside.

      2. Heat 1 tsp butter and 2 tbsp olive oil in the pan. Sauté the onions until translucent and then add the risotto rice. Stir everything well and sauté for 1-2 minutes. Now deglaze with 100ml (1/2 cup) white wine and reduce over a medium heat until there is no more liquid in the pan.

      3. Now pour 100ml (1/2 cup) of the stock into the rice. Leave to simmer, stirring occasionally, until the liquid has evaporated. Now pour in the next 100ml, stir and leave it to simmer until the rice soaked up the liquid. Proceed in the same way with the remaining 200 ml (1 cup) of stock, adding 100 ml (1/2 cup) at a time and allowing to simmer.

      4. Now add 150ml (1+ 1/4 cup) of the water to the rice and also let it cook until the rice absorbed the water. Next, add 100ml (1/2 cup) of white wine. Finally, add the last 150ml (1+ 1/4 cup) of water and cook now while stirring. The whole process takes about 40 minutes.

      5. Remove the pot from the heat and stir in the Parmesan. Stir well so that the Parmesan melts. Now add half of the fried mushrooms and stir well.

      6. Divide the risotto between plates and top with the other half of the mushrooms. Top with freshly ground pepper and olive oil to taste.

      • 200g minced lean beef (7 oz)
      • 2 slices cheddar cheese 
      • 2 burger buns
      • 1 tsp clarified butter

       

      SAUCE

      • 40g mayonnaise (2 tbsp)
      • 1/4 tsp white wine vinegar
      • 1 tsp Dijon mustard
      • 2 pickles 
      • 1/8 tsp paprika powder
      • 1 garlic clove
      • 1/8 tsp pepper

      CARAMALIZED ONIONS

      • 200g white onions (7 oz)
      • 1 tsp clarified butter
      • 1/4 tsp salt
      • splash of balsamic vinegar
      • splash of worcestershire sauce

      CAJUN FRIES

      PREPARATIONS

      • large pan
      • Wash the potatoes thoroughly.
      • Fill a medium-sized bowl with cold water.

        COOKING

        1. Cut the potatoes into long strips and place in the bowl of cold water for about 20 minutes.

        2. Peel the onions and cut into semicircles. Melt 1 tsp clarified butter in a pan. Add the onions to the pan and sprinkle with 1/4 teaspoon of salt. Stir well and leave to caramelize for approx. 20-30 minutes until the onions have turned golden yellow. Stir occasionally. 

        3. Now pour off the water of the fries. Spread 2 tablespoons of peanut oil over the fries and toss well so that the fries are coated evenly in oil. Then bake the fries in the airfryer or in the oven at 200°C (400°F) for 20-30 minutes until crispy.

        4. In the meantime, prepare the burger sauce. First cut the pickles into small pieces and place in a bowl. Peel the garlic clove and add it minced to the pickles. Now add the mayonnaise, white wine vinegar, Dijon mustard, paprika, salt and pepper and mix well. Set aside.

        5. Divide the minced beef into 2 portions of 100g (3.5 oz) each and shape into a ball. Set aside.

        6. Cut the burger buns in half lengthwise, brush the insides with a little butter and fry briefly in a hot pan until crispy on both sides. Remove the buns from the pan and set aside.

        7. Now add the balsamic vinegar and Worcestershire sauce to the onions and heat for a further 5-10 minutes on a low heat.

        8. Wipe out the pan and heat 1 tsp clarified butter in it.

        9. Remove the chips from the airfryer or oven and pour them back into the bowl. Season with salt and Cajun seasoning, toss well and divide between the plates.

        10. Now place the meatballs in the hot pan and flatten with a heavy object, fry for 1 minute, turn over, place a slice of cheddar on top, close the lid of the pan and fry for a further minute. Remove the pan from the heat.

        11. Spread the sauce evenly over the four halves of the burgers. Then place the meat patty with the cheese on the bottom bun. Spread the caramelized onions on top of the cheese and close the burger with the top of the bun.
