  • 2 fine mash strainer
  • sealable container (oil bottle)
  • ice cubes
  • coffee filter

Ingredients

  • 35 grams fresh chives
  • 250 milliliter neutral cooking oil

Instructions

  1. Wash the chives and place them in a blender. Pour in the oil. Blend on the highest setting until only tiny pieces of the chives remain.
  2. Pour the mixture from the blender into a small pot and heat it over medium heat to about 100 °C (213 °F). Maintain this temperature for 5 minutes, stirring occasionally to ensure the temperature stays steady and nothing burns.
  3. Meanwhile prepare a bowl large enough to hold the pot and fill it with cold water and a handful of ice cubes. Place a fine-mesh strainer over one medium-sized bowl, and another fine-mesh strainer lined with a coffee filter over a second bowl.
  4. Next, set the pot in the ice water and stir to cool the oil quickly. Once the oil is almost cold, remove the pot from the water and pour the oil through the first strainer to catch the coarse particles.
  5. Then, pour the strained oil through the second strainer lined with the coffee filter to remove any remaining fine particles. Allow the oil to drip through for about 30 minutes, or less depending on how many particles remain in the filter.
  6. Once all the oil has passed through, transfer it into a sealable container or directly into an oil bottle. Store in the refrigerator for up to one week.

Ingredients

BAKED EGGS
  • 2 eggs
  • 1 tbsp cream
  • 1.5 tsp herb cream cheese
TOPPINGS
  • 30 grams baguette
  • chives
  • salt & pepper

Instructions

  1. Crack two eggs into a small ovenproof dish. Spread a tablespoon of cream on top, as well as 1.5 teaspoons of herb cream cheese. Place the dish in the oven at 180°C (350°F) for about 18 minutes.
  2. Meanwhile, cut the chives into rolls and the baguette into slices.
  3. When the eggs are ready, take them out of the oven and top with salt, pepper and chives. Chive oil also goes very well. Enjoy with fresh baguette for dipping.
  • Passive Time: 15 min

Ingredients

  • 100 grams kimchi
  • 3 spring onions
  • 100 grams all-purpose flour
  • 20 grams cornstarch
  • 1/2 tsp turmeric
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 100 milliliters water
  • 2 tsp clarified butter

Instructions

  1. Roughly chop the kimchi and place in a medium-sized bowl with 2 tbsp of its marinade.
  2. Wash the spring onions and cut into fine strips. Set aside a small portion of the green strips as a topping for later. Add the rest to the bowl.
  3. Now add the flour, cornstarch, water, salt, turmeric and baking powder to the kimchi and spring onions in the bowl and mix to form a smooth batter.
  4. Heat a medium-sized frying pan with 1 tsp clarified butter. Pour half of the batter into the pan and fry on both sides until crispy. Now add another teaspoon of clarified butter to the pan and fry the second half of the batter in the pan.
  5. Cut the kimchi pancake into large pieces, serve hot on a plate and top with the remaining green spring onions.

Ingredients

CHICKEN
  • 400 grams chicken breasts
  • 1 tsp clarified butter
SOUR CREAM & ONION SAUCE
  • 1 tsp butter
  • 3 big onions
  • 4 garlic cloves
  • 200 milliliters heavy cream
  • 200 milliliters vegetable broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried marjoram
  • 1/2 tsp dried oregano
  • salt & pepper to taste
BEURRE MANIÉ
  • 1 tsp butter
  • 1 tsp all-purpose flour

Instructions

  1. Peel, halve and cut the onions into thin semicircles.
  2. Peel and finely chop or press the garlic.
  3. Mix 1 teaspoon of butter and 1 teaspoon of flour in a small bowl until creamy. This is the beurre manié that you will use to bind the sauce later.
  4. Preheat the oven to 200°C (400°F)
  5. In a large pan, heat 1 tablespoon of butter and sauté the onions until they have gained a bit of color, for about 15 minutes. Then add the garlic. Stir everything well and sauté for 1-2 minutes.
  6. Now add the vegetable broth and deglaze the pan. Let everything simmer for about 5 minutes on medium heat. Now add the heavy cream. Stir everything well. Add the beurre manié, stir well and bring to a boil until the sauce has thickened. Now add salt, pepper, thyme, oregano, and marjoram, stir to combine, let it come to a boil briefly, and set aside.
  7. In an ovenproof skillet, heat 1 teaspoon of clarified butter and sear the chicken breasts on both sides. Do not fully cook the meat, as it will finish cooking in the oven and then become really tender.
  8. Now spread the entire onion & cream sauce over and between the chicken in the skillet. Smooth out and bake in the oven uncovered for about 30 minutes until done.
  9. Remove the skillet from the oven and enjoy the chicken and sour cream caramelized onions with rice, pasta, potatoes, mashed potatoes, or just simply bread.

Ingredients

SALAD
  • 400 grams chicory
  • 2 pears
  • 2 tbsp walnuts
  • chives
DRESSING
  • 3 tbsp olive oil
  • 2 tbsp cold water
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove
  • salt & pepper to taste

Instructions

  1. Roast the walnuts in a pan without adding any fat until golden brown and fragrant. Roughly chop them on a chopping board and add to the salad bowl.
  2. Wash the chives, cut into small rolls and add to the salad bowl.
  3. Halve the chicory lengthways and pluck off the leaves one by one. Wash and dry the leaves well and add to the salad bowl.
  4. Wash the pears, cut in half and slice finely down to the stem and add to the other ingredients in the salad bowl. Mix everything well.
  5. In a small bowl, mix the olive oil, lemon juice, water, honey, Dijon mustard and pressed garlic clove with a whisk to make a creamy dressing and season with salt and pepper to taste. Pour the dressing over the salad, mix well and serve immediately.
